Hi! I'm Jane, and this story begins in 2021 (although it really started years prior with Carnes Collective). I've always dreamed of opening a coffee shop, and I was finally able to make that dream a reality. My goal was to create a space where people could relax, enjoy a great cup of coffee, and connect with others.

After the closure of Carnes Collective in 2020, I missed my customers and the coffee industry so much that I decided to reincarnate it into Moon Hollow Coffee. And wow, did it take off! Our customers were eager to return, and they spread the word to their friends as well.

As an entrepreneur at heart, I'm always dreaming and creating. One day, I stumbled upon an incredible opportunity on Marketplace that led me to open the coffee bus, Betsey.

And now, I'm excited to share that we've taken another big step in our journey! In May 2024, we opened our brand-new coffee lounge. This addition has allowed us to expand our offerings and provide even more space for our customers to enjoy their favorite drinks and pastries.

The name Moon Hollow has a special meaning for me. It's a nod to a memorable experience I had at my old home in Blair. There, a friendly fox would often visit my yard and sit outside my window at night. Its playful personality and unexpected presence inspired me to include a fox in our logo.

After brainstorming countless names, I chose "Moon Hollow" as the perfect fit. And when we opened our Omaha location, the fox appeared in our yard with six kits! It was a clear sign that I had made the right choice.
